I’m looking to use the Community Edition license but all I get while trying to activate the server is an expired trial license that I can’t use to install a server.
Is there any way to get a Community Edition license without starting a new trial with a different email?

Thanks for getting in touch! You need a Valid licence Key to install Octopus. Please send us your licence key to Support@OctopusDeploy.com and i’ll extend it so you can continue with the installation
Once this licence expires, it will automatically become a Community Edition

Yes, you will be able to upgrade to 3.0 with the Community Edition. But if you want to do a side-by-side transition you would need to have a temporary license like a trial license to install the second instance.
