Could not find any good documentation that explains the difference between “Project Variable Templates” and “Common Variable Templates” as seen from a tenant perspective. Could you give me an example of a couple of variables that belongs in these templates? That would be a big help…

Simply put, common variable templates are variable values that remain constant across projects and environments. Whereas (quoting that doc page):
Project variable templates will be collected once for each project/environment combination the tenant is connect to.
