Is there a way to release multiple projects at one time? Currently, You have to click on each projects and then select the appropriate environment.

Thanks for getting in touch! Octopus does not have any ability to trigger the deployments of multiple projects. Generally customers will use our octo.exe create/deploy release features and script the execution of multiple project deployments at once.

We do have a UserVoice suggestion that you could add votes and comments to: https://octopusdeploy.uservoice.com/forums/170787-general/suggestions/9811932-allow-project-dependencies-so-deploying-one-proj
Or you can create your own if that does not match your use case for the feature you would like to see.
