we went to integrate our deployment process + variables to our subversion. What would you recommend here? Export the whole variables / process as .json and versionise them and if needed import this back to octopus?

Thank you for your question.
This would entirely depend on how you would like to keep backups of your processes and variables,
What you have mentioned in regards to import and export is a method which is a viable option.
