Is there a way to delete a release without a retention policy? I have been updating variables and need to delete and recreate the whole project every time I make a change to a variable.

Thanks for the question. Currently the only way is through the Octo.exe command line tool:
We know that the need to create a new release because of a changed variable is a bad experience and we have an item in our backlog to fix this soon.

Only because I’m curious when you delete a release is it a HARD or SOFT delete?
